Between christmas and new year
As ERAS applicant: can we afford to be out of country between Christmas and New Year? Could somebody else take interview calls/messages for us to return? Have an important reason to leave, but don't want to risk a year.

Well not unless you're going some place where you won't have internet access and hence will be unable to correspond via email and track your applications via ERAS, then I don't think there's any problem if you're outside of the US during the holidays. That's the beauty of ERAS- everything's electronic!
